Egg free banana choc chip muffin

Ingredients:

Banana 2 big ones mashed

Butter melted 1/4 cup

( I used Pyrex measuring jug)

All purpose flour 11/2 cup

Baking powder 1/4 ts

Baking soda 1/4 ts

Sugar 1/2 cup

Choc chips 1/4 cup

Vanilla essence 1/2 ts

Milk 1/2 cup

 

Preheat oven at 180 degree

In a bowl add flour,baking powder,baking soda,sugar,choc chips,vanilla essence,milk,mashed banana and melted butter

Mix well.

Pour into cup cake moulds and bake for 15-20 minutes or until muffins look golden brown.

Cool on wire rack and enjoy.

 

Poha(avalakki) Dosa

Ingredients:

Idli rice 2 cups

Methi seeds 2 tbs

Poha 1 cup

Yogurt 11/2 cups

Salt to taste

Baking soda 1/2 ts (optional)

 

Method:

Soak rice and methi seeds 4-5 hours

Just 10 minutes before grinding soak poha.

Grind drained rice ,methi seeds,poha with yogurt and salt to a fine paste.

Leave the batter in a warm place to ferment overnight.

Just before making dosa u can add baking soda.

Heat a nonstick tawa and pour the batter close with the lid.

Cook for 2-3 minute.

Serve with any chutney or sambar.....

Oats rava idli

Ingredients:

Quick oats 11/2 cups

Semolina 1 cup

Yogurt 2 cups

Grated carrot 1

Oil 2ts

Mustard seeds 1 ts

Curry leaves chopped 10

Green chilli chopped 2

Salt to taste

Cooking soda 1/2 ts

Coriander leaves chopped 2 tbs

 

Method:

Dry roast semolina and keep aside

Dry roast oats,cool and grind into powder.

Heat oil add mustard seeds when they splutter add chopped curry leaves,chopped green chilli fry for a minute

Add grated carrot fry for 5 minutes or until the raw smell goes

Take a bowl and add oats powder,semolina,salt,cooking soda,carrot mixture and yogurt.

Mix well. Add water to adjust the consistency.

Leave the mixture for 10 minutes.

Meanwhile heat the idli cooker and grease the moulds

Pour the mixture into idli moulds and cook for 15 minutes

5 minutes on high heat and 10 minutes on low heat.

Serve with chutney. Enjoy.

 

Dill leaves vada

Ingredients:

Chana dal 2 cups

Dill leaves chopped a small bunch

Green chilli chopped 3-4

Ginger grated 1tbs

Onion chopped finely 1

Salt to taste

Cumin seeds 2 ts

Oil 11/2 cup for deep frying

 

Method:

Soak the chana dal for 4-5 hours,drain and grind coarsely.

Add all other ingredients except oil, mix well

Make small balls and flatten them

Heat oil and deep fry the vadas till golden brown.

Serve.

Banana halwa

Ingredients:

Mashed banana 5 big ones

Sugar 11/2 cups or to taste

Ghee 2 tbs

Powdered cardamom 2-3 pods

 

Method:

Heat a Kadai add mased banana and sugar in it.

Cook stirring on medium flame until sugar caramelises

Add ghee and cook until halwa forms a ball shape

Add cardamom powder

Pour the halwa on greased plate

When it is cool cut into shapes.

Enjoy.

 

Apple kheer

Ingredients:

Butter 1 tbs

Apples 4 grated with skin on

Sugar 1 cup or according to taste

Milk 1 litre

Cardamom powdered 3-4 pods

 

Method:

Heat butter add grated apples fry for 5 minutes or the moisture from apple disappears.

Add sugar and cook for 10-15 minutes stirring often.

While apples are cooking heat a litre of milk and cook till reduces to half.

Add reduced milk to stewed apples

Add cardamom powder.

Cook for 1 minute and switch off the heat.

Serve hot or cold....

Kobbari mithai

My husband loves everything made out of coconut. This is his favourite sweet.

 

Ingredients:

Grated coconut 3 cups

Sugar 21/2 cups or according to your taste

Cardamom seeds 3-5 crushed

Ghee 1ts to grease the plate

 

Procedure:

Add coconut and sugar in a Kadai and Cook.

Sugar starts to melt, cook stirring until all the moisture from the mixture dries up.

Add crushed cardamom powder.

Pour the mixture into a greased plate and cool.

Cut into shapes and serve....

You can store this for 4-5 days in a airtight container.

 

 

Basale soppu huli

Ingredients:

Basale soppu 1 bunch

Toor dal 1/2 cup

Oil 1 ts

Red chillies 5-7

Garlic cloves 3-4

Coriander seeds 2 tbs

Jeera seeds 1 ts

Mustard seeds 1 ts

Grated coconut 11/2 cup

Tamarind small piece

Water

 

Cook toor dal in pressure cooker and keep aside

Cook basale soppu

Meanwhile heat a teaspoon of oil and roast red chillies,garlic,coriander seeds,cumin seeds and mustard seeds until nice aroma comes out.

Grind these with grated coconut,tamarind adding water into a paste.

Add cooked dal,ground paste to cooked leaves and bring to a boil.

Serve with rice or steamed rice balls ( pundi)...

Simple tomato onion curry for chapathi

Ingredients:

Tomato chopped 5-6

Onion chopped -2

Green chilli sliced 2-3

Oil 2 tbs

Mustard seeds1 ts

Rasam powder 2-3 ts

Salt to taste

Coriander leaves 2 tbs for garnish

 

Heat oil add mustard seeds, wait till they crackle add onion and fry till they turn translucent.

Add green chilli,tomato and salt

Cook for 2-3 minutes

Add rasam powder cook until tomato cooks.

Switch off the heat and garnish with coriander leaves.

Serve with chapathi.

Pav bhaji

Ingredients:

Finely chopped veggies like potato,carrot,beans,cauliflower and peas-2 cups

Onion chopped 2 medium ones

Tomatoes chopped 2-3

Ginger and garlic paste 2 tbs

Chilli powder 1 ts

Pav bhaji masala 3 tbs

Salt to taste

Oil 2 tbs

Pav buns buttered

Red onion rings

Lemon wedge

Coriander leaves 2-3 tbs

 

 

Cook vegetables adding little water and keep aside

Heat oil add onions and fry till light brown.

Add ginger and garlic paste fry for a minute.

Add tomatoes and fry until they turn mushy

Add chilli powder,pav bhaji masala and salt

Add drained vegetables, mash with a masher

Adjust the consistency adding vegetable cooked water.

Boil for 3-4 minutes

Garnish with coriander leaves.

Serve with pan fried bun,onion rings and lemon wedge.
