Egg free banana choc chip muffin

Ingredients:

Banana 2 big ones mashed

Butter melted 1/4 cup

( I used Pyrex measuring jug)

All purpose flour 11/2 cup

Baking powder 1/4 ts

Baking soda 1/4 ts

Sugar 1/2 cup

Choc chips 1/4 cup

Vanilla essence 1/2 ts

Milk 1/2 cup

 

Preheat oven at 180 degree

In a bowl add flour,baking powder,baking soda,sugar,choc chips,vanilla essence,milk,mashed banana and melted butter

Mix well.

Pour into cup cake moulds and bake for 15-20 minutes or until muffins look golden brown.

Cool on wire rack and enjoy.

Dill leaves vada

Ingredients:

Chana dal 2 cups

Dill leaves chopped a small bunch

Green chilli chopped 3-4

Ginger grated 1tbs

Onion chopped finely 1

Salt to taste

Cumin seeds 2 ts

Oil 11/2 cup for deep frying

 

Method:

Soak the chana dal for 4-5 hours,drain and grind coarsely.

Add all other ingredients except oil, mix well

Make small balls and flatten them

Heat oil and deep fry the vadas till golden brown.

Serve.

Pav bhaji

Ingredients:

Finely chopped veggies like potato,carrot,beans,cauliflower and peas-2 cups

Onion chopped 2 medium ones

Tomatoes chopped 2-3

Ginger and garlic paste 2 tbs

Chilli powder 1 ts

Pav bhaji masala 3 tbs

Salt to taste

Oil 2 tbs

Pav buns buttered

Red onion rings

Lemon wedge

Coriander leaves 2-3 tbs

 

 

Cook vegetables adding little water and keep aside

Heat oil add onions and fry till light brown.

Add ginger and garlic paste fry for a minute.

Add tomatoes and fry until they turn mushy

Add chilli powder,pav bhaji masala and salt

Add drained vegetables, mash with a masher

Adjust the consistency adding vegetable cooked water.

Boil for 3-4 minutes

Garnish with coriander leaves.

Serve with pan fried bun,onion rings and lemon wedge.

Enjoy this Indian version of mashed vegetable burger!!!

Masala vade/chettambade

Ingredients:

Chana dal 1 cup soaked overnight

Green chilli chopped 3-4

Curry leaves chopped 8-10

Ginger chopped 1/2 inch

Coriander leaves chopped 2 tbs

Salt to taste

oil to deep fry

 

 

Grind Chana dal without adding water into coarse paste

Add all the chopped ingredients and salt

Mix well.

Heat oil,shape the dal paste into a ball and flatten

Deep fry in the oil on medium heat.

Serve ...

 

Black Chana usli

Usha's

Ingredients:

Black Chana 2 cups soaked overnight

Oil 2 tbs

Mustard seeds 2 ts

Urid dal 2 ts

Green chilli chopped 3-4

Curry leaves 8-10

Salt to taste

Grated coconut 3 tbs

 

Cook the soaked Chana in pressure cooker adding salt and water for 4-6 whistles

Drain the water from Chana and keep aside

Heat oil add mustard seeds and Urid dal when mustard seeds crackles add chopped green chilli and curry leaves.

Fry for a minute ,add drained Chana mix well to coat the seasoning

Garnish with grated coconut.

Serve.

Chivda

Usha's

Ingredients:

Poha/ avalakki thin 100g

Oil 2 tbs

Mustard seeds 1 ts

Peanuts 4 tbs

Roasted gram 4 tbs

Dry coconut slices 10-15

Curry leaves 15-20

Green chilli chopped 4-5

Salt to taste

Turmeric powder 1/2 ts

 

Heat oil in a pan add mustard seeds,peanuts and roasted gram wait for peanuts to get light brown add coconut slices curry leaves,chopped green chilli,salt and turmeric powder.

Fry for a minute,switch off the heat and add poha. Mix well to coat the seasoning.

Serve... Enjoy.

Golibaje

Ingredients:

Plain flour (maida) 1 cup

Sour yogurt 1/2 cup

Salt to taste

Bi carb of soda a pinch

Ginger chopped 2 tbs

Coriander leaves chopped 2 tbs

Curry leaves chopped 2 tbs

Besan flour 2 tbs

Green chilli chopped 2-4

Water to adjust the batter.

Oil for deep frying

 

Method:

Mix all the above ingredients except water and oil.

Adjust the consistency of batter to idli batter consistency using enough water.

Keep the batter aside for 3-4 hours.

Heat oil and drop spoonful of batter to oil.

Deep fry to get golden colour.

Serve with chutney or sambar.
