Cucumber dosa

Ingredients:

Sona masoori rice 3 cups

Salt to taste

Grated coconut 1 cup

Cucumber peeled chopped 1 big

( I used one big continental cucumber)

 

Soak rice in water for 3-5 hours

Drain the water and grind with salt,coconut and cucumber

Make a thin batter adding enough water

Batter should be like neeru dosa batter

Heat non stick tawa pour a laddlefull of batter into a thin layer

Cover the tawa with a lid ,cook for 2- 3 minutes.

Take the dosa out of tawa using spatula.

Serve with chutney or curry....

Poori

Ingredients:

Wheat flour 2 cups

Salt to taste

Water to make dough.

Oil to deep fry.

 

In a bowl add wheat flour ,salt and water.

Mix well and add enough water to make pliable dough.

Keep aside for 1/2 an hour

Take a small ball of dough and roll it into small chapathi.

Deep fry in the oil.

Serve with sagu or potato palya... Enjoy.

 

Mixed vegetable sagu

Ingredients:

Chopped vegetables 3 cups

( I used choko,carrot,beans,peas)

Onion 1 chopped

Tomato 1 chopped

Oil 1 tbs

Mustard seeds 1 ts

Salt to taste

 

 

To grind

Coconut grated 1 cup

Coriander seeds 1 tbs

Cumin seeds 1 ts

Dalia( roasted Chana dal) 2 tbs

Cinnamon 1 cm piece

Cloves 2-4

Green chilli 3-5

Coriander leaves 4-5 sprigs

Ginger 1 inch

 

 

Grind all the ingredients under to grind into paste

Cook the vegetables adding enough water.

Heat oil add mustard seeds ,when they splutter add onion fry till translucent

Add tomato fry for 3-5 minutes

Add paste ,vegetables , salt and enough water

Bring to boil .

Serve with poori or chapathi,set dosa...

 

Halbai/manni

Ingredients:

Sona masoori rice 1 cup

Salt to taste

Grated coconut 1/2 cup

Jaggery 1 cup grated

Cardamom pods powdered 3-4

Water to grind

 

Method:

Soak rice for 3-4 hours.

Grind the rice adding pinch of salt and water to a smooth paste.

Heat a Kadai add the batter and start stirring

Batter should be like milkshake consistancy.

stir continuously do not let lumps to form.

When it starts to thicken add grated jaggery and cook

Have a little taste ,you should feel batter is cooked

Add grated coconut and cardamom powder ,stir for 2-4 minutes.

Pour on greased plate and cool completely.

Cut into any shapes ,serve and enjoy...

Fried modaka

Ingredients:

For dough:

Maida 1 cup

Salt to taste

Water as required

 

for filling:

Grated coconut 1 cup

Jaggery according to taste

Cardamom powder 1 ts

 

Oil to deep fry

 

Method:

Make chapathi like dough using maida ,salt and water.

Prepare the filling.

Roll the small ball of dough like chapathi,place a table spoon of filling on centre and close the edges of dough and make the shape of modaka .

Deep fry in oil until golden brown.

This dish is made on Ganesha festival as offering to lord Ganesha.

 

Bhindi/ okra masala

Ingredients:

Okra chopped 500 gm

Onion chopped 2

Tomato puréed 3

Oil 2+ 2 tbs

Cumin seeds 1ts

Ginger and garlic paste 2tbs

Turmeric powder1/2 ts

Salt to taste

Chilli powder 1 ts

Coriander powder 1 tbs

Cumin powder 1 ts

Garam masala 2 ts

 

 

Method:

Heat 2 tbs oil add okra and fry for 10 minutes or until sliminess is gone and okra 3/4 cooked.

Keep aside.

Heat oil add cumin seeds,when they crackle add onion

Fry till translucent add ginger and garlic paste, fry for a minute.

Add tomato purée, cook till the raw smell of tomato goes away

Add all the powders and salt.

Fry for a minute.

Add fried okra,gently mix without breaking okra.

Cook for 3-4 minutes and switch off the heat.

Serve with chapathi or rice.

 

Dal palak

Ingredients:

Palak washed and chopped 1 bunch

Tomato chopped 1

Garlic crushed 2-4 cloves

Oil 1tbs

Mustard seeds 1 ts

Red chilli broken 2

Green chilli sliced 3-5

Salt to taste

Toor dal cooked 1 cup

Turmeric powder 1 ts

 

Method:

Cook toor dal with turmeric powder.

Heat oil add mustard seeds when they splutter add red chilli, green chilli and crushed garlic

Fry for a minute or until garlic gets light brown

Add tomato and fry for a minute.

Add chopped spinach and fry till it wilts

Add cooked dal ,salt. Bring to boil.

Serve with rice or chapathi.

 

Cabbage palya

Ingredients:

Cabbage chopped 1/2 head

Oil 2 tbs

Mustard seeds 1 ts

Urid dal 1 tbs

Green chilli 3-4 sliced

Red chilli 2 broken

Curry leaves 1 sprig

Salt to taste

Grated coconut to garnish 2 tbs

 

Method:

Heat oil add mustard seeds ,Urid dal, and broken red chilli

When seeds crackle add green chilli and curry leaves

Fry for a minute add chopped cabbage ,mix well to coat seasoning.

Sprinkle some water and close with a lid

Cook for 5 mins

Open lid and add salt , cook till cabbage cooked and water dries up.

Add grated coconut. Switch off the heat.

Serve with rice or chapathi.

 

Apple jilebi

Ingredients:

Apple 2 cut into thin discs

Maida 1 cup

Corn flour 1 tbs

Baking powder 1/2 ts

Yellow food colour 1/2 ts

Water to make batter

Oil to fry

 

 

For sugar syrup:

Sugar 1 cup

Water 1 cup

Lemon juice 2 tbs

Cardamom pods 2-3 crushed

Crushed pistachio to garnish

 

 

Method:

Cut apple into thin discs ,remove seeds

Make batter using maida,corn flour,baking powder and food colour by adding water.

Keep aside for half an hour.

Meanwhile prepare sugar syrup

Heat oil ,dip apple discs into the batter and deep fry.

Drain on paper towel.

Dip into the sugar syrup for 2 mins

Take out and serve garnished with crushed pistachio nuts.
